Contributed by: customer Diane Hughes

This recipe was not tested in the Bob's Red Mill kitchen but was submitted by a customer who wanted to share a recipe they enjoyed with others.

Directions

Mix together the dry ingredients in a medium bowl.  Add the milk and egg and mix until combined.  Pour batter onto heated skillet coated with generous amount of oil.  Heat on both sides until done.

Goes great with fresh strawberries or strawberry jam; or make a fried egg sandwich.

Makes about 10 medium-sized pancakes.

I just purchased the GF Baking flour and wanted to find a good pancake recipe to try- boy did I hit the jackpot! I did make a small alteration to this, which I offer here as compliment to an already great recipe. I grated an apple into the batter- try it.

These are execellent! My whole family liked them and that's saying something. I did make a couple changes though. I didn't have any flaxseed meal on hand so I used 1 cup of GF flour, and I can't have dairy either so I used almond milk. Very, Very happy with this recipe!
