I just purchased the GF Baking flour and wanted to find a good pancake recipe to try- boy did I hit the jackpot! I did make a small alteration to this, which I offer here as compliment to an already great recipe. I grated an apple into the batter- try it.

These are execellent! My whole family liked them and that's saying something. I did make a couple changes though. I didn't have any flaxseed meal on hand so I used 1 cup of GF flour, and I can't have dairy either so I used almond milk. Very, Very happy with this recipe!
