Gluten-Free Vegan Banana Bread

This recipe was not tested in the Bob's Red Mill kitchen but was submitted by a customer who wanted to share a recipe they enjoyed with others.


Preheat oven to 350˚F. Grease 2 bread loaves and set aside.

Blend together all dry ingredients. Blend in all wet ingredients one at a time, except the bananas, until smooth. Finally add bananas until well incorporated. Divide batter equally between the two pans. Bake 40 minutes, rotating pans after 20 minutes. Banana bread is done when toothpick comes out clean. Makes 2 loaves (13 slices each).

This was the BEST banana bread I have EVER had! My husband agreed, and two co-workers and one of their husbands all raved about it too! The best part is that beyond being gluten-free, it is also dairy and egg free as well! A must try!!!!

This recipe was easy and fabulous. Makes a tender moist banana bread. I put mini chocolate chips in one loaf and walnuts and raisins in the other. Definitely making this again. 1.5 cups of mashed banana turned out to be 3.5 bananas for me.

Tried this recipe this morning and I loved it! The loaf was light and moist. Made a few changes - cut back the sugar to half a cup and used coconut sugar and I added some chopped dates to the mix too. This recipe yielded one large loaf and one mini.

This was fantastic! I used Earth Balance instead of coconut oil and it came out great.
