Buckwheat Banana Oat Muffins

This recipe was not tested in the Bob's Red Mill kitchen, but was created by a customer to get multiple uses from the pancake mix.

  • 1 cup 1/2 Buckwheat Pancake Mix
  • 1 cup Regular Rolled Oats
  • 1/2 cup Brown Sugar
  • 1 tsp Baking Soda
  • 1/2 tsp Sea Salt
  • 1 Egg
  • 3/4 cup Milk, low-fat
  • 1/3 cup Vegetable Oil
  • 1/2 tsp Vanilla
  • 1 cup Banana, mashed

Directions

Combine the pancake mix, oats, sugar, baking soda, and salt.

In a separate bowl, beat the egg lightly. Stir in the milk, oil, and vanilla. Add the mashed banana and combine thoroughly. Stir the flour mixture into the wet mixture until just combined.

Line a 12-cup muffin tin with paper baking cups (or spray with non-stick spray), and divide the batter among them. Sprinkle some oats on top for decoration. Bake at 400 °F for 18 to 20 minutes.

These muffins were awesome. I purchased the Buckwheat Pancake mix for pancakes but realized I would not be using it all up and I had bananas ready to go. I made a double batch and took them to a potluck lunch and everyone loved them. Fabulous.

These are the best muffins ever! Found this recipe trying to use up ripe bananas and so glad I did! This recipe is definitely a keeper!!
