Soy Flour Cake

This low carb recipe was not tested in the Bob's Red Mill kitchen but was submitted by a customer who wanted to share a recipe they enjoyed with others.

  • 4 Tb Butter, softened
  • 4 Tb Splenda
  • 1 tsp Vanilla
  • 1 Egg, beaten
  • 1 tsp Baking Powder
  • 1 pinch of salt
  • 1 cup Soy Flour
  • 1 cup Milk*

Directions

Cream together the butter and splenda. Add the egg and vanilla and blend until smooth. Add the baking powder, salt, soy flour and milk and mix until blended. Batter will be fairly thick.

Spread into an 8 x 8-inch buttered glass cake pan; it will be about one and a half inches thick, even when baked. Bake at 350°F for 30 minutes, or until golden brown on top. Allow to cool before cutting.   Makes 8 servings.

*Water can be used in place of milk and will slightly lower the amount of carbs.

Thank you very much Sue Khavari for sharing your recipe!! I really enjoyed making and eating it!! Its a great basic recipe that can be very versitile. It almost has a very fine/smooth cornbread texture with just the right sweetness, I just love it!!
