Lentil Chili Con Carne (no beans)

  • 2 Tb Olive Oil
  • 1 Beef Stock + 1 pt. qt.
  • 1 lb Extra Lean Ground Beef
  • 1 large Yellow Onion, peeled & chopped
  • 2 cloves Garlic, peeled & minced
  • 12 oz can Tomato Sauce
  • 2 cans Diced tomatoes in Puree (12 oz)
  • 2 cups Cooking Liquid, reserved from lentils
  • 2 Tb Chili Powder
  • 2 tsp Ground Cumin
  • 1 tsp Sugar
  • 1 can Sliced Black Olives, drained (5 oz)
  • 1 tsp Sea Salt
  • 10 oz washed & sorted Lentils

Directions

Place prepared lentils in a 2-quart saucepan, add stock and 1 tablespoon of oil. Cover and simmer 15 minutes or until lentils are tender, but still holding their shape. Drain, reserving cooking liquid and set aside.

Saute beef in remaining oil until lightly browned. Add onions and garlic continue cooking 5 minutes. Stir in tomato sauce, diced tomatoes, reserved cooking liquid, chili powder, cumin and sugar. Cover and simmer 45 minutes or until meat is tender. Add lentils and olives, then return to simmer. Adjust consistency as desired and season to taste with salt.

Makes 8 servings.
