Honey Almond Granola Oatmeal Bread

Directions

Step 1

Combine the milk and granola and let stand for one hour.

Step 2

Proof the yeast by dissolving it in the warm water and sugar and let stand for 10 minutes.

Step 3

Add granola mixture to a food processor and blend well. Add the proofed yeast mixture, molasses, butter, applesauce and salt to the granola and mix in food processor, adding enough flour until dough leaves sides of bowl.

Step 4

Place dough on floured surface and knead until elastic, adding flour as needed. The dough will be barely sticky but still a soft dough.

Step 5

Place the dough in a lightly greased bowl, turn to grease all sides and allow it to rise until doubled in size, lightly covered with damp hand towel.

Step 6

Gently deflate the dough, and shape it into a freeform loaf. Let rise until doubled on a greased baking sheet. Towards the end of the rising, preheat the oven.

Step 7

Bake the bread at 350°F for 40 to 50 minutes. When the bread is done, it'll be golden brown, and an instant-read thermometer inserted into the center will register 190°F. Remove the bread from the oven and cool completely before slicing.

Makes 1 loaf (16 slices).
