Directions
Spray a 4 quart oven proof baking dish with nonstick vegetable spray, set aside.
Preheat oven to 350°F. Saute onion and garlic in butter until transparent. Add split peas and cook until lightly browned. Place in prepared baking dish. Heat vegetable or chicken stock; add the herbs. Pour over split pea/onion mixture and stir to mix well. Cover and bake for 50 minutes or until split peas are tender, but still holding their shape. Makes 12 servings. |
