Light and Fluffy Gluten Free Pancakes

Kimberly wanted to share her recipe for gluten free buttermilk pancakes using the Bob's Red Mill Gluten Free Pancake Mix.

  • 1-1/2 cups GF Pancake Mix
  • 2 Eggs
  • 1-1/2 cups Buttermilk
  • 1 Tbsp Unsalted Butter (melted)


Mix together and pour scant 1/4 cup of batter onto a greased griddle. The pancakes will bubble, and when the bubbles start to break you can turn them. They should be cooked to golden brown on each side. Serve with butter and syrup, preserves, fresh fruit, or all of the above!  Makes 4 servings of 2 pancakes each.

Great Recipe! I love the simplicity of this recipe; no need to make it complicated in the morning. And the pancakes are great!

This has become a Sunday morning staple in our house!
