Seeded Chia Quick Bread

This recipe has been adapted from a recipe by The Chia Company. High Fiber, Low/No Sugar, Soy-Free.

Directions

Step 1

Preheat oven to 400°F. Grease and line a 3.5 inch x 9 inch loaf pan.

Step 2

Sift flours, soda, sugar and salt into a large mixing bowl. Combine chia, sunflower, pumpkin and sesame seeds. Place all but 2 Tbsp of these seeds into the flour mixture. Add buttermilk and stir to create a soft dough.

Step 3

Press the dough evenly into pan. Sprinkle over remaining seeds and press into mixture lightly. Bake for about 35 minutes, until bread is firm in the center. Turn out and allow to cool. Slice and serve.

This same recipe on the Chia Seed package says to place all but 1 cup of the seed mixture into the flour mixture so all the seeds fell off as it baked. The recipe here states 2 Tbsp, which makes much more sense!

I was wondering how you were supposed to put 1 cup of seeds on top of this bread!!! Figured it must have been a typo, but I did my best & piled about 1/2 cup on top, lol. Its still delicious.

We thought this sounded strange, too! After testing, we changed the recipe to incorporate all the seeds into the bread but 2 Tbsp, which are sprinkled on top.

This has a texture much like a buttermilk biscuit. My bread turned out well, but do note that it is plain tasting so you will need butter and jam to go with it. All in all a very nice breakfast bread.

The Seeded Chia Quick Bread recipe does not call for water, but instead uses 1-3/4 cups of Buttermilk.
