Pumpkin Apple Spice Pancakes

  • 1-1/2 cups GF Pancake Mix
  • 1/2 tsp Nutmeg
  • 1/4 tsp Allspice
  • 1 Egg
  • 1 cup Coconut Milk (or milk of choice)
  • 2 Tb Vegetable Oil
  • 1/2 cup Pumpkin Puree
  • 1/4 cup Applesauce

Directions

Whisk the pancake mix and spices together in a bowl.  Add the wet ingredients ans stir until combined.
Cook on a medium-hot griddle that has been sprayed with nonstick spray.  When the pancakes have well-formed bubbles around the edges, turn and cook the other side.  Makes 18 pancakes.
