Choco-Peanut Butter Chip Cookies

Holly got many ideas from other customer submitted recipes, so was happy to add one for others to try.

This recipe has not been tested in the Bob's Red Mill kitchen.

  • 1 cup Unsalted Butter (softened)
  • 2 Eggs
  • 2 tsp Vanilla Extract
  • 2-3/4 cups GF Chocolate Cake Mix
  • 1 oz Peanut Butter Chips

Cream butter and 1 cup of the cake mix together until fluffy, add eggs and vanilla. Beat until well blended. Add the rest of the cake mix and blend until completely incorporated.
Add bag of peanut butter chips and fold into dough.  Refrigerate until dough is a little stiffer (about 20 minutes).
Roll into 1 inch balls and place on parchment lined cookie sheets. Bake 10 minutes at 350°F.
Allow to cool 1 minute, then remove and place on wire racks to cool.  Makes 4 dozen cookies.

Did this recipe when away at the Cape. I thought I had a chocolate chip mix - but forgot it. Adapted the recipe to include almonds, dried cherries and 70% chocolate chunks. Yummy. Thanks. KV

Delicious! Way better than using this mix for a cake or cupcakes. I used Melt coconut butter. Mine weren't really easy to form into balls and needed to cook a little longer, but the adjustments were easy. Tastes like a gooey brownie cookie.
