Directions
Preheat the oven to 375°F.
Core & slice the apples into 8 pieces, placing them in a 13 x 9-inch baking pan. Use enough apples to cover the bottom of the baking pan so don't be shy about burying them 2 deep. Use more or less apples as needed. It is recommended to use 1 Granny Smith apple for every 2 McIntosh apples. Mix together the white sugar, cinnamon and 2 teaspoons of the pancake mix in a small bowl and then sprinkle on the apples. Place the butter in a small saucepan on low heat to melt. Mix together the rest of the pancake mix and the brown sugar in a bowl. Pour all of the melted butter into the bowl and mix in with the rubber spatula. Use the spatula and your fingers to cover the apples with gobs of the mixture. Place the pan in the oven & bake for 1 hour. Makes 16 servings. Let it cool, but you definitely want it warm when you serve it. Serve it with french vanilla ice cream or just by itself. |
