Gourmet Chocolate-Dipped Cookies

Adding chocolate to these cookies made from our Gluten Free Shortbread Cookie Mix is sure to delight!

  • 4 cups GF Shortbread Cookie Mix
  • 3/4 cup Unsalted Butter unsalted & cut into 8 pieces
  • 1 Egg Yolk large
  • 2 Tbsp Water
  • 1/2 cup Bittersweet Chocolate high-quality, finely chopped
  • 1 tsp Unsalted Butter
  • 1/2 cup Chopped Nuts very finely ground


Prepare the cookies in 2-inch shapes as directed, and cool to room temperature.
In a 1-quart heavy saucepan, melt the chocolate and butter over low heat, stirring constantly, until smooth. Remove from the heat.
Dip cookie halfway into the chocolate mixture and lay on a sheet of waxed paper to cool. For thicker chocolate coating, dip more than once. Lightly sprinkle with nuts right after dipping.  Makes 36 cookies.
