Gourmet Chocolate-Dipped Cookies

Adding chocolate to these cookies made from our Gluten Free Shortbread Cookie Mix is sure to delight!

  • 21 oz (4 cups) GF Shortbread Cookie Mix
  • 1 1/2 sticks unsalted Butter, cut into 8 pieces (3/4 cup)
  • 1 large Egg Yolk
  • 2 Tb Water
  • 1/2 cup high-quality Bittersweet Chocolate, finely chopped
  • 1 tsp unsalted Butter
  • 1/2 cup very finely ground chopped Nuts


Prepare the cookies in 2-inch shapes as directed, and cool to room temperature.
In a 1-quart heavy saucepan, melt the chocolate and butter over low heat, stirring constantly, until smooth. Remove from the heat.
Dip cookie halfway into the chocolate mixture and lay on a sheet of waxed paper to cool. For thicker chocolate coating, dip more than once. Lightly sprinkle with nuts right after dipping.  Makes 36 cookies.
