Kasha Okonomiyaki

  • 1/2 cup Finely Chopped Onion
  • 1 cup Finely Chopped Cabbage
  • 1 cup Chopped Ham
  • 8 Green Olives, chopped
  • 1 cup Shredded Cheese
  • 1 cup cooked Organic Kasha
  • 2 large Eggs
  • 1 cup Milk
  • 2 cups Unbleached White Flour

Sauce

  • 1/4 tsp Freshly Grated Ginger
  • 1-1/2 tsp Mayonnaise
  • 1/8 tsp Dry Mustard
  • 2 Tb Ketchup

Directions

Beat flour, milk an eggs together in a large bowl. Stir in kasha, cheese, olives, ham, cabbage and onion, mixing well.

On a well-oiled griddle or fry pan, spoon the mixture, spreading evenly into four individual portions. Cover over medium low heat for approximately 10 minutes, until golden brown. Turn and repeat, patting the surface occasionally with a spatula.

Cut into wedges and serve hot with sauce spread thinly over the top.

Makes 4 servings.
