Finnish Form Bread

This recipe was not tested in the Bob’s Red Mill Kitchen but was submitted by a customer who wanted to share a recipe they enjoyed with others.


Preheat oven to 300°F.

Mix together pumpernickel rye meal, unbleached white four, ground cardamom seeds, caraway seeds and salt in a bowl. Set aside.

Mix in a small cup the active dry yeast, ¼ cup warm water and sugar. Let stand and allow to bubble.

Mix into the dry ingredients the oil and water. Next mix in the yeast mixture.

Knead thoroughly, carefully adding more flour or water as needed. The resulting dough should be moist and elastic.

Warm the oven for a few minutes to about 90-100°F, then turn off. Cover the bowl with a cloth and put in oven and allow to rise for 2-3 hours.

Shape into a round, flat loaf. Place on a sheet of parchment paper or a cookie sheet. Let the dough rise again for 2 hours at 90-100°F by using same process as before.

Cut ½ -inch deep slits in one direction, about 1 ½-inches apart with a knife. Bake at 300°F for 1 hour and 15 minutes. Remove from oven and let cool on a baking rack.

Makes 13 slices.

Great recipe. You probably meant two tablespoons of caraway seeds, not just two caraway seeds. BFP
