Simply Sensational Oat Bran Muffins

This recipe was not tested in the Bob's Red Mill kitchen but was submitted by a customer who wanted to share a recipe they enjoyed with others.

Directions

Preheat oven to 350°F.  Line muffin tins with paper liners.
In a large mixing bowl, combine the Oat Bran & Date Nut Muffin Mix together with the brown sugar, salt, walnuts, chocolate chips, dried cranberries and shredded coconut.  Add the diced banana and stir.
Combine the water, vegetable oil, egg and vanilla in a bowl.  Whisk together until combined.  Make a well in the center of the dry muffin mixture and pour in the liquid ingredients.  Stir together until mixed well, careful not to over mix.
With an ice cream scoop, fill the muffin tins almost to the top.
Bake at 350°F for 25 minutes or until golden.  When cooled spread with mascarpone cheese sweetened with a little honey.  Makes 16 regular size muffins.

This recipes says 1/3 cup veg. oil - twice....is this a mistake??
