Whisk together the flour and Xanthan Gum to combine.  Add the egg and water and mix well.  Turn out the dough and knead until smooth.  Divide the dough in half, roll it out and cut as desired.  To dry the noodles, hand and let sit overnight.  Makes 4 servings.

I made this to use with my stand mixers pasta maker and it worked great! Super yummy pasta my husband said they tasted better then non GF noddles.

I found this recipe required 2 tsp of the xanthan gum and more water.
I also noticed the dough swelled when working with this. I had enough pasta for two nights!

I have a lot of experience making fresh pasta (non GF). This was my first attempt making GF. It didn't work at all. It came out like paper-mache.

I made this pasta with my KitchenAid stand mixer pasta attachment and it worked great. I made very narrow noodles, like angel hair pasta, or the noodles from a box of Mrs. Grasses Soup. Just tossed some into a bowl of soup and they were awesome. My husband loved them.

Perfect noodles for chicken noodle soup! Just like store-bought, but gluten-free!
