Vicki & Bob Make Muffins

  • 3 Eggs, lightly beaten
  • 1 cup Apple, finely chopped
  • 1 cup Carrot, finely chopped
  • 1 cup Zucchini, grated
  • 1 cup Raisins
  • 3/4 cup Milk
  • 1 tsp Vanilla
  • 1/2 cup Pure Maple Syrup
  • 1 Tb. Extra Light Tasting Olive Oil (or Canola Oil)
  • 1 cup 1/2 10 Grain Pancake Mix
  • 3/4 cup Brown Flaxseeds Meal
  • 1/2 cup Regular Rolled Oats
  • 1/2 tsp Baking Powder
  • 2 tsp Baking Soda
  • 2 tsp Cinnamon
  • 1/4 tsp ground Ginger

Directions

Preheat oven to 350°F. Blend together beaten eggs, apples, carrots, zucchini, raisins, milk, vanilla, maple syrup and olive oil in a large sized bowl. Set aside. In a medium bowl, combine the pancake & waffle mix, flaxseed meal, old fashioned oats, baking powder, baking soda, cinnamon, and ginger. Stir wet ingredients once more and slowly fold the dry ingredients into the wet until ingredients are well blended. Lightly spray muffin tins with olive oil or canola oil spray. Fill tins 3/4 full. Bake for 25-30 minutes. Makes 24 muffins.
