Directions
In bowl, cream together the butter and sugar until smooth. Add the vanilla and egg and blend until creamy. In another bowl, combine the flour, oats, hemp seeds and baking soda. Add the flour mixture into the wet ingredients and blend until all the dry is incorporated. Form dough into round one inch balls and place on greased cookie sheet. Bake at 350° F for 12-15 minutes. Makes 18 cookies.

These are so, so good! They are easily made vegan by using Earth Balance instead of margarine and a flax egg (1 Tbsp. ground flax seed whisked with 3 Tbsp. water) for the egg. I used whole wheat pastry flour and added 1/2 cup of golden raisins.
