Hemp No Meat Loaf


Preheat oven to 325°F. Grease a 9 x 5-inch loaf pan and set aside.

Cook the rice with the water as directed. In the meantime, combine the red pepper, onion, garlic, pepper, basil, salt and olive oil in a blender. Blend on high until smooth.

In a bowl, combine shelled hemp seeds, prepared rice, cornstarch and the mixture from the blender. Pour into a loaf pan. Bake for 1 hour.  Makes 12 servings.

Delicious! I used about half each wild and wehani rice, about 1 1/2 c onions, and less salt and pepper. Otherwise, I followed the recipe. I love that the veggies don't need to be sautéed, it fit perfectly in the pan, and it held together yet was moist.
