Dairy-Free "Ice Cream"

  • 1/2 cup Pecan Halves chopped
  • 3/4 tsp Guar Gum
  • 2 Tbsp Vegetable Oil
  • 1/4 cup Honey
  • 1 liter Rice Milk chocolate or carob flavored

Directions

Chill rice beverage for several hours in the refrigerator.

Combine 3 cups of the rice beverage, honey, oil and guar gum in blender container. Blend until mixture is very smooth.

Pour approximately half of the mixture into a 2 quart ice cream maker. Add the rest of the 1 liter container of rice milk to the blender, and mix again. Pour into ice cream maker and stir well to mix. Freeze according to manufacturer’s instructions.

Variation: Add 1/2 cup Bob’s Red Mill sliced pecans or almonds before freezing.

Makes 8 Servings.
