Cycle: Basic yeast bread
Peel and cut the potato into 1/2" cubes. Simmer it in the first amount of water until very tender, about 25-30 minutes. Cool to lukewarm. Thoroughly mash the potatoes in the water, adding more water to bring the volume of the mixture up to the amount specified above (1-1/4 cups). Add the mixture and the rest of the ingredients to the machine and start the cycle. Since potatoes very in moisture content, you should check the consistency of this dough after 5-10 minutes of kneading and correct if necessary. After baking cycle if done, remove pan from bread machine. Invert pan and remove bread onto wire rack. Allow to cool completely before slicing. Makes one 1-1/2 lb loaf (16 slices). |
