Brown Bread with Raisins

Directions

Preheat oven to 375 degrees. Lightly spray the interior of five 16 ounce fruit cans with nonstick vegetable spray. The bottoms of the cans should be intact.

Combine flours, cornmeal, sugar and xanthan gum. Mix baking soda and salt into applesauce. Add to flour mixture, then add molasses and raisins.

Pour about 1 cup of batter into each prepared can.

Bake 30 minutes or until cake tester comes out clean. Remove from oven, cool 10 minutes.

Remove bottom lids from cans and remove bread from cans onto wire rack to cool completely. Wrap securely with plastic wrap and store overnight in refrigerator before serving.

Makes 5 mini-loafs (3 servings each).
