Fava Bean Salad

  • 2 cups cooked Fava Beans
  • 1 tsp Shallot
  • 1 tsp Garlic
  • 2 tsp Lime Juice
  • 2 Tbsp Balsamic Vinegar
  • 3 oz Extra Virgin Olive Oil
  • 1/2 cup Shitake Mushrooms
  • 1/4 cup Red Onion, chopped
  • 2 Tomatoes
  • 1/4 cup Yellow Pepper
  • 1 Salt and Pepper to taste

Directions

Combine and toss ingredients in a salad bowl.

Makes 6 servings.
