DirectionsStep 1Place the Fava Beans in a bowl, cover with water to a depth of 2 inches and allow them to soak overnight. Drain the beans and place them in a saucepan. Cover with cold water to a depth of 2 inches and simmer, partially covered until the beans are very tender - about 1 1/2 hours. Drain.Step 2Turn on food processor. With the machine running, drop in the garlic, scallions, cilantro and mint and process until finely minced. Remove 2 tablespoons if this mixture and set aside. Add the beans, 1/4 cup of the olive oil, the cumin, paprika and lemon juice to the food processor and process until smooth. Season to taste with salt and pepper.Step 3Place the puree in a shallow dish and drizzle with the reamining olive oil.
