Fava Bean Dip

Fava Bean Dip

  • 1-1/2 cups Fava Beans
  • 1/4 cup Lemon Juice
  • 1-1/2 tsp Paprika
  • 1-1/2 tsp Ground Cumin
  • 1/3 cup Extra Virgin Olive Oil
  • 2 Tbsp Mint coarsely chopped
  • 2 Tbsp Cilantro coarsely chopped
  • 2 Scallions coarsely chopped
  • 4 Garlic cloves
  • 1 Salt and Pepper to taste


Step 1

Place the Fava Beans in a bowl, cover with water to a depth of 2 inches and allow them to soak overnight. Drain the beans and place them in a saucepan. Cover with cold water to a depth of 2 inches and simmer, partially covered until the beans are very tender - about 1 1/2 hours. Drain.

Step 2

Turn on food processor. With the machine running, drop in the garlic, scallions, cilantro and mint and process until finely minced. Remove 2 tablespoons if this mixture and set aside. Add the beans, 1/4 cup of the olive oil, the cumin, paprika and lemon juice to the food processor and process until smooth. Season to taste with salt and pepper.

Step 3

Place the puree in a shallow dish and drizzle with the reamining olive oil. Sprinkle the reserved herb and garlic mixture on top and serve with pita bread for dipping.

Makes 8 servings.
