Directions
Cook sweet white rice using basic cooking instructions. After rice is tender and the water has been absorbed, add coconut milk to cooked sticky rice and stir over medium heat for 5 minutes or until thickened. Stir in sugar and salt. Reduce heat to low and simmer, covered, for two minutes. Taste and adjust sugar if needed. Peel mango and slice off the cheeks, then slice those into smaller pieces. Serve warm rice on a platter with chilled mango slices arranged decoratively on top. Makes 6 servings.
