Long Grain Brown Rice and Lentil Stew

  • 5 cups Chicken Stock, plus 3 cups water (Vegetable or Mushrooms)
  • 1 Bay Leaf
  • 1/4 tsp Thyme
  • 1/2 tsp Oregano
  • 1/2 tsp Basil
  • 3 cloves Garlic minced ()
  • 1 rib of Celery sliced ()
  • 3 Carrots sliced ()
  • 2 cans Tomatoes chopped with juice (16oz) ()
  • 1 cup 1/4 Lentils
  • 1 cup Long Grain Brown Rice
  • 1/2 cup fresh Parsley

Directions

Combine all ingredients except parsley and simmer 20-25 minutes or until tender. Remove bay leaf and add parsley. A ham bone may be added if desired. Serve.

Makes 8 servings.
