Long Grain Brown Rice Pilaf

  • 1/4 cup Slivered Almonds
  • 2 Tbsp Unsalted Butter
  • 1 cup Long Grain Brown Rice
  • 1 cup Mushrooms sliced
  • 1/2 cup Carrots thinly sliced
  • 1 can Chicken Broth (14oz can)
  • 1 cup Water
  • 2 Tbsp Soy Sauce
  • 1 Green Onion thinly sliced

Directions

Saute almonds in 1 tablespoon of the butter until golden brown. Remove and set aside. Melt remaining butter; stir in the rice and saute until lightly browned. Add the mushrooms, carrots, broth, water and soy sauce; bring to a boil. Cover and lower heat to a simmer. Cook 20-25 minutes or until tender. Garnish with the almonds and green onion.

Makes 4 servings.
