Rice and Lentil Stew

Rice and Lentil Stew

  • 5 cups Chicken, Vegetable or Mushroom Stock, plus 3 cups Water
  • 1 cup Basmati White Rice
  • 1-1/4 cups Lentils
  • 32 oz canned Tomatoes, chopped with Juice
  • 3 Carrots, sliced
  • 1 rib of Celery, sliced
  • 3 cloves of Garlic, minced
  • 1/2 tsp Basil
  • 1/2 tsp Oregano
  • 1/4 tsp Thyme
  • 1 Bay Leaf
  • 1/2 cup fresh Parsley

Directions

Combine all ingredients except parsley and simmer 20-25 minutes or until tender. Remove bay leaf and add parsley. A ham bone may be added if desired. Serve.

Makes 8 servings.
