Rice and Lentil Stew

Rice and Lentil Stew

  • 5 cups Chicken Broth (or Vegetable or Mushroom Broth)
  • 3 cups Water
  • 1 cup Basmati White Rice
  • 1-1/4 cups Lentils
  • 1 can Diced Tomatoes with juice (32oz can)
  • 3 Carrots sliced
  • 1 Celery stalk, sliced
  • 3 Garlic cloves, minced
  • 1/2 tsp Basil
  • 1/2 tsp Oregano
  • 1/4 tsp Thyme
  • 1 Bay Leaf
  • 1/2 cup Parlsey (fresh)

Directions

Combine all ingredients except parsley and simmer 20-25 minutes or until tender. Remove bay leaf and add parsley. A ham bone may be added if desired. Serve.

Makes 8 servings.
