Directions
Cook lentils in water for about 20-30 minutes, or until tender but not soft; drain. Prepare millet by combining millet grain with 1-1/2 cups water and cook for about 25 minutes, until soft but not mushy; drain. Spread onto a cookie sheet to cool and dry.
Combine oil, spices, lemon juice and salt. Mix together millet, lentils and shredded carrots. Stir together and chill for a few hours. Makes 16 servings. |
