Indian Lentil Salad

  • 1/2 cup Hulled Millet
  • 1/2 tsp Garlic Powder
  • 1 tsp Sea Salt
  • 2 tsp Black Pepper
  • 1 tsp Ground Coriander
  • 2 tsp Ground Cumin
  • 2 cups Carrot shredded
  • 1/2 cup Lemon Juice
  • 1/4 cup Olive Oil
  • 1-1/2 cups Lentils

Directions

Cook lentils in water for about 20-30 minutes, or until tender but not soft; drain. Prepare millet by combining millet grain with 1-1/2 cups water and cook for about 25 minutes, until soft but not mushy; drain. Spread onto a cookie sheet to cool and dry.

Combine oil, spices, lemon juice and salt. Mix together millet, lentils and shredded carrots. Stir together and chill for a few hours.

Makes 16 servings.
