Popcorn Balls

  • 1 Butter Flavored Cooking Spray
  • 1 tsp Vanilla Extract
  • 2 tsp Rice Vinegar (white or brown)
  • 2 Tbsp Maple Syrup
  • 1 cup 3/4 Light Corn Syrup
  • 1/2 cup Yellow Popcorn

Directions

Pop popcorn and transfer to large roasting pan or heatproof bowl. In a heavy saucepan, combine corn syrup, maple syrup and vinegar. Attach a candy thermometer to the side of the pan and cook until mixture reaches the soft crack stage, 275°F ( a small amount dropped into very cold water will seperate into hard but pliable threads.) Remove from heat. Stir in vanilla. Pour syrup over popcorn, stirring it in gently with a long-handled wooden spoon until all the popcorn is coated. Be careful, as the syrup is very hot. After about 5 minutes, when popcorn is cool enough to handle, spray your hands with cooking spray and form popcorn mixture into 12 balls. Wrap popcorn balls in cellophane.

Yield 12 Popcorn Balls.
