Corn Fritters


Heat 3-4 inches oil to 375°. Combine liquid ingredients and add to dry ingredients. Dip chopped meat or vegetables (watery vegetables do not work well) in batter. If batter does not stick, dip the pieces in flour first. Drop slices or bite-sized pieces into hot oil. Fry until well browned, turning to brown all sides. Takes 3-5 minutes. Drain on paper towels. Serve hot. Here are some suggested vegetabels that work great:

sliced carrots
onion rings
broccoli crowns
cauliflower crowns
string beans
sliced eggplant
sliced squash
