Bob's Barley Gem Muffins

Topping

  • 1 tsp Ground Cinnamon
  • 2 Tbsp Sugar

Directions

Preheat oven to 425°F. Sift together flour, sugar, baking powder and salt. Stir in oats, Bob's Red Mill Rolled Barley, raisins and nuts. Combine milk, oil and egg; add to dry ingredients and mix only until dry ingredients are moistened. Fill greased muffin pans 1/2 full. For topping, combine sugar and cinnamon; sprinkle on top of muffins. Bake 15 minutes or until done. Serve piping hot with butter.

Makes 12 muffins.
