Clyde's Hummus Recipe

Hummus.

  • 2 Tb. Olive Oil
  • 3/4 cup Garbanzo Bean Flour
  • 2 or 3 Garlic Cloves, minced
  • 1 Tb. Chicken Flavored Seasoning
  • 1/4 tsp Cumin, ground
  • 1/4 tsp Tabasco sauce
  • 1/4 tsp Sea Salt
  • 1 Juice of one Lemon
  • 1/4 cup Tahini
  • 2-1/2 cups Water

Directions

Pour 1/2 cup of water in 1 2 qt. sauce pan. Add all the ingredients except the garbanzo bean flour. Whisk in the garbanzo bean flour to make a paste.
Whisk in slowly the remaining water. Bring to a boil over medium heat, stirring occasionally. Continue stirring and Simmer for 3 minutes. Remove from heat, cover and cool. Use as a sandwich spread or as a dip. Makes 6 servings.
VARIATIONS:
*Add 1 tsp. Chipolte seasoning.
*Add 1/2 cup black beans. Mash beans before adding to other ingredients.
*Add 12oz. jar of water-packed Roasted Red Peppers and 4 Jalapeno pepper slices. Decrease amount of water to 3/4 cup. Finely chop red pepper with the liquid in the jar and the jalapenos. Add to remaining ingredients.
