Gluten-Free Pancakes

Directions

Blend egg and yogurt (or milk) in blender or whisk vigorously in bowl. Add remaining ingredients and blend, just until mixed.

Over medium heat, place large, nonstick skillet that has been lightly coated with nonstick spray. Pour batter into skillet and cook until tops are bubbly (3-5 minutes); turn and cook until golden brown (2-3 minutes).

This recipe can be doubled.

Makes 8 pancakes.

I substituted coconut oil for the vegetable oil and brown sugar for regular sugar. They were fantastic!!!!

I made these into vegan "pumpkin pie pancakes" by replacing the egg and oil with pumpkin purée, and the sugar/vanilla with maple syrup and pumpkin pie spice. My kids love them!
