Cindy's Surprise Waffles

Cindy wanted to share this recipe, in case it could help another gluten intolerant waffle fan. Enjoy!


Preheat waffle iron and coat with cooking spray. Mix together dry ingredients in one bowl, and wet ingredients in another (except water). Add wet ingredients to dry, cutting in with a fork. Slowly add water to the mixture and stir until reaching desired consistency. Mix quickly and no more than necessary to combine ingredients. Stir in about 1/3 cup raisins if desired. Cook waffles immediately. Makes 4 waffles. 

Variation: Substitute fruit juice for water.

This recipe rocks! Very fluffy and the vanilla adds a yummy flavor. I used Bob's pizza crust flour because it contained all the flours . I wasn't sure if I needed to add the baking powder per recipe but I did. Thanks Cindy your recipe rocks!
