Carey's Summer Soy Beans

This dish uses a pressure cooker to speed up cooking time.

  • 3 cups to 4 Water (to cover contents of the pan)
  • 1 pound Country Sausage or 2 Tbsp Olive Oil (for a Vegetarian Option)
  • 1 medium Onion, chopped
  • 1/4 cup to 1/2 Celery, finely chopped
  • 1 tsp Thyme
  • 1/2 tsp Oregano, Mediterranean
  • 1 tsp *1 Sage
  • 1 Tbsp Parsley Flakes
  • 1/2 tsp to 1 Pepper
  • 4 or more Garlic Cloves, crushed and chopped
  • 1 tsp Salt
  • 1 cup Soy Beans (soaked overnight)

Directions

1. Soak the soy beans overnight and drain.

2. Brown the sausage.

3. Add the onions and celery and sauté until onions are translucent.

4. Add the remaining ingredients and mix well.

5. Cook under pressure for 10 minutes.

6. Let pressure cooker cool naturally until pressure drops and it is safe to open.

Makes 12 servings.
