Cranberry BreadContributed by: Bob's Red Mill Natural FoodsThis delightful recipe is on our Triticale Flour label.
Directions
Sift together the flour, baking powder, and sugar. If the sugar is lumpy, rub it through the sifter. In a large bowl, beat together the egg and the oil. Gradually add the orange juice and mix well. Add the vanilla and orange peel and mix well. Add the flour mixture to the liquid mixture and beat with a wooden spoon just long enough to mix well. Fold in the cranberries. Turn the batter into a well-oiled and floured loaf pan. Bake at 350°F for 30-35 minutes or until a toothpick inserted into the center of the bread comes out clean (unless you hit a cranberry). Let the bread cool in the pan for about 5 minutes, then remove it from the pan and cool on a rack. You may slice it with a serrated bread knife after about 15-20 minutes.
Makes about 12 slices. |
