Amaranth Pancakes

Gluten Free, Lactose Free, Low Cal, Low Fat, Low Sugar.

Directions

Step 1

In a medium bowl, beat egg. Then beat in juice and oil.

Step 2

Add remaining ingredients to egg mixture one by one, beating after each addition.

Step 3

Heat griddle to medium high and cook until bubbly; turn and cook until done.

Makes 10 - 3 inch pancakes.

This is an easy, outstanding pancake recipe, packed with flavor! The recipe makes a thin, moist pancake that has become a family fav!
You can substitute milk for the apple juice, it's not as good but will do in a pinch.

After adding the amaranth the entire batter became thick like a cookie dough. It took a good cup of water to thin it out. I also used flax seed meal mixed with water for the egg, and flax milk for the milk.
