DirectionsStep 1Preheat oven to 375°F. Lightly spray a cookie sheet with nonstick vegetable spray; set aside.Step 2In a bowl combine the flours, sugar, baking powder, cinnamon and salt. In another bowl combine almond extract, water, oil and honey.Step 3Add wet ingredients to dry ingredients and fold in the chopped almonds.Form dough into balls and place on greased cookie sheet. Step 4Bake 8-12 minutes until lightly golden. Let cookies set on baking sheet 10 minutes; remove carefully to cooling rack. Enjoy.Makes 24 cookies. |

This was a very simple recipe and fun to make with my 5 year old. I think they are fine and have a nice texture, but they are WAY too sweet for us. I think next time I\'ll really cut down on the amount of honey and see if that helps.

I didn\'t have honey, almond extract, almond flour, or almonds. i used whole wheat pastry flour and then agave nectar in place of honey/sugar because that's what we had in the house. The cinnamon really makes these great, very basic but that teaspoon of cinnamon goes a long way.

This is a great recipe. I substituted Kamut flour all purpose, used olive oil and omitted the sugar. Next time, I will reduce the honey to 1/4 cup. I will also flatten the balls on the cookie sheet slightly because mine came out more round than flat.

Super easy and fast to make with kids. I used agave instead of sugar, a little more almond meal since agave is liquid and half the amount of honey. They turned out good but next time I think I'll add craisins to add an extra texture. My 2 1/2 year old girls loved them!
