Sleeping Giant Multigrain Bread

This recipe won first place in the Yeasted Bread category at our 2005 Summer Loaf Bread Baking Contest. This bread requires 2 days to make, so plan ahead and trust us- it's worth it!

Directions

DAY 1: SOAKER: Mix the grains together in a medium bowl with ¾ cup water and let stand overnight.

DAY 2: RICE: The following day cook brown rice to package instructions* and let cool. *Place ½ cup short grain brown rice, 1 cup water, ¼ tsp Salt, and a pinch of Cardamom in saucepan with a tightly fitting lid. Bring to boil over high heat, stir and cover. Reduce heat and simmer for 45-55 minutes until tender. (Brown rice will have a slightly crunchy texture.)

DOUGH: In a shallow pan, toast sunflower seeds, raw pumpkin seeds, and sprinkling of salt- at 350°F for 10 minutes- stirring often. Let cool. In a large bowl, combine 6 cups white flour, 1 Tbsp salt, 6 Tbsp brown sugar, and 2 Tbsp instant yeast. In another large bowl, combine “soaker,” ½ cup honey, 1 cup buttermilk, ½ cup sunflower seed butter, ½ cup cooked brown rice, toasted seeds, ¾ cup water. Add flour mixture to “soaker” mixture. Work together until just combined to form soft dough. Cover with plastic wrap and let rest 20 minutes.

Turn dough onto a lightly floured board and knead for 10 minutes. Dough should be slightly sticky. If necessary adjust dough consistency by adding a little flour or water. Return dough to clean bowl lightly coated with cooking oil, turning dough to coat with oil. Cover with plastic wrap and let rise until doubled.

Divide dough into 3 equal pieces, shape loaves and let rise in oiled 3”x 5”x 9” loaf pans until almost doubled in size. Brush tops with egg wash** and sprinkle with poppy seeds. Cut loaves ¼” deep lengthwise. Preheat oven to 350°F and bake for 30-40 minutes, until well-browned and internal temperature of 195°F.

**Egg wash: Egg yolk or egg white mixed with a small amount of water or milk. It's brushed over breads, pastry and other baked goods before baking to give them color and gloss. Makes 3 loaves (12 slices each).
