Teff Banana Bread

  • 1 cup Banana, mashed
  • 1/2 cup Date Pieces
  • 1 cup Currants
  • 1/2 cup Hazelnuts (Pieces)
  • 1/2 tsp Salt
  • 1/2 tsp Baking Soda
  • 1/2 tsp Baking Powder
  • 1 tsp Cinnamon, Saigon (Premium)
  • 1 cup Turbinado Sugar
  • 1/2 cup Unsalted Butter
  • 1 Egg beaten ()
  • 1/4 tsp Anise Extract
  • 1 cup 3/4 Teff Flour

Directions

Preheat oven to 350°F.

Toss a few tablespoons flour over dates, currants and hazelnuts and set aside. Blend baking soda, baking powder, salt and cinnamon with remaining flour.

Cream together butter and sugar. Mix in eggs, anise and banana. Add to dry ingredients, including nuts and fruits, and mix well.

Spoon into an greased 9-inch loaf pan and bake for 40-45 minutes, or until toothpick inserted in the center comes out clean.

Makes 12 Servings.
