Refried Beans

These refried beans can be made ahead of time and stored for 2-3 days in the refrigerator.

  • 2 cloves Garlic, finely minced
  • 1/2 small Onion, finely diced
  • 1 Tb Vegetable Oil
  • 3 cups raw Black Turtle Beans

Directions

Follow basic bean recipe for cooking raw beans. Reserve 1/2 cup to 1 cup of the cooked bean broth to incorporate into refried beans.

Heat oil in a skillet and add the onion and garlic. Cook until soft. Add the cooked beans and cook, mashing with a small potato masher or ricer. As the beans start to thicken, start adding a little of the reserved broth from the bean pot until the beans are soft enough to mound slightly. Set aside to cool briefly, serve. Makes 12 servings.

Note: Pinto beans may be substituted in this recipe.
