Pumpkin Flax Quick Bread

This recipe is adapted from, adding more flaxseed meal and whole wheat flour.


1. Preheat oven to 350°F. Lightly grease one 9X5-inch loaf pan or muffin pan.

2. Whisk together the flax and water.  Mix in sugar, pumpkin and applesauce.

3. In a large bowl, stir together dry ingredients.  Add flour mixture to pumpkin mixture; stir until smooth.

4. Pour batter into prepared pan.  Bake loaf for 65-70 minutes or muffins 15-20 minutes, until a toothpick inserted comes out clean.  Makes 12 servings.
