New York Rye Bread from the Breadmachine

This is a low-rising, very dense, flavorful loaf just like you buy on the streets of New York City. If you want a lighter, fluffier loaf, add Bob’s Red Mill vital wheat gluten. The caraway may be adjusted to taste.
Ingredients:
  • 1-1/8 cups Water (room temperature) 
  • 1-1/3 Tb Vegetable Oil 
  • 2 Tb Honey 
  • 1 tsp Sea Salt 
  • 1 Tb Whole Caraway Seeds 
  • 1-1/3 cups Organic Dark Rye Flour 
  • 2-1/4 cups White Flour, Unbleached 
  • 1 Tb (optional) Vital Wheat Gluten 
  • 1/4 cup Milk Powder (Non-Fat Dry) 
  • 2-1/2 tsp Yeast, Active Dry 
Directions:
All ingredients should be at room temperature before starting.

Add all ingredients in the order suggested by your bread machine cycle and process on the basic bread cycle according to the manufacturer’s directions. Let loaf cool for 15 minutes before slicing.

Makes 1-1/2 lb loaf (13 slices).
