Light Spelt Flour is quite simply spelt flour with the bran and germ partially removed to make a lighter flour. Use light spelt flour in baking where a lighter touch is preferred.

Details

Savor the whole grain goodness of spelt, an ancient relative of durum wheat that originated in the Near East over 8,000 years ago. This heirloom grain later spread throughout Europe, becoming especially popular in Germany, where it was farmed throughout the Middle Ages. Bob's Red Mill Light Spelt Flour is freshly milled on cool and slow turning, century-old stone-buhr millstones and then carefully sifted to remove just enough of the bran and germ to make a great baking flour that is also nutritious.

Spelt is unusual because it can be more easily digested than other forms of wheat, and some people with wheat intolerances may be able to tolerate spelt; however, spelt is not gluten free.

Use light spelt flour in baking where a "lighter" touch is preferred—pastries, biscuits, cakes and the like.

    I really like this flour I've used it in cookies, honey wheat bread and an apricot loaf. Tastes great tastes just like regular flour it's not heavy and no unusual flavors.

    Bob's light spelt is wonderful! My family tries to avoid regular wheat due to digestive issues, but sometimes you just gotta have homemade pizza (or brownies or pumpkin bread or...). This flour is a great substitute for regular wheat flour -- just use the same amount. I've used it for all kinds of baked goods with wonderful results - you'd never know that it wasn't regular old wheat flour, and it doesn't bother our sensitive tummies. Thanks Bob!
