Lima beans have been cultivated since 2,000 BC along the coastal region of Peru. Lima, the capital of Peru, is the place where the early European explorers were believed to have first discovered these beans. Often called "butter beans" because of their starchy yet buttery texture, lima beans have a delicate, mellow flavor that complements a wide array of savory dishes. They are a very good source of protein, dietary fiber and iron. If you're wondering how to replace meat in your diet, indulge yourself with the buttery taste of lima beans.
