    This book is excellent. The authors teach you how to make artisan breads at home, using a dump-and-stir, no-knead method that you can really accomplish in just a few minutes. Their doughs are relatively "wet," which is what allows you to get away with not kneading them. After an initial rise of a couple hours, you can shape a loaf right away and/or you can put some or all of the dough into your fridge and store it for five to fourteen days. Whenever you want some fresh bread you just cut off a lump of dough in the size that you need and fire up the oven. Easy-peasy!

    Their previous book was centered on white flour doughs, and there's a second edition of it now, called "The New Artisan Bread in Five Minutes a Day." This book, "Healthy Bread in Five Minutes a Day," is focused on using whole-grain flours, including a chapter on baking with gluten-free grains. There are several "master recipes," which make delicious breads on their own with just a few ingredients. And there are other recipes that build on those - you take a lump of your stored dough and add a few things to it to make a whole different kind of bread. They use their doughs to make sandwich loaves, pizza crusts, dinner rolls, bread sticks, brioche, scones, pastries, and anything else you can think of, with healthy ingredients. I love it!
