Author: Laura Alright, this might turn out to be a novel, so just bear with me. Haha! I was nervous to try the chocolate chip cookie mix after reading mixed reviews about it on Amazon.com, but I had already purchased a bag and decided to give it a shot. I added two extra tablespoons of margarine, the egg, a dash of cinnamon, and a quick little splash of vanilla almond milk (I figured it wouldn't hurt). After blending it all together, the dough wasn't dry like the package instructions foretold... must have been the extra stuff I put in. haha. :) The dough was sticky and a bit difficult to get on the cookie sheet... I stuck a few walnuts to the top of each cookie and put them in the oven. Meanwhile, I tasted the raw batter from the mixing bowl... it had an unpleasant taste - like metallic beans or something! I shrugged it off, hoping that the taste would somehow improve after baking. I was right! The cookies were delicious after they came out of the oven, and they had an almost cake-like texture on the inside. I was impressed by how fluffy mine turned out, again, probably because of the tweaking I did to the recipe. Overall, I would say this is a great mix! My advice: don't be turned off by the taste of the uncooked batter. It IS made with bean flour after all, but that taste will go away after baking. :) If you're really feeling unsure about it, it never hurts to add a little something extra, like more chocolate chips, walnuts, cocoa powder, etc.
Thanks Bob, for providing such great GF products!
~Blessings,
Laura Ward, MI
