Fava Bean Flour is finely stone ground from rich and creamy fava beans after the tough outer spines have been removed.

Fava beans are a wonderful large “old world” bean sometimes confused with the lima bean. In truth it is worlds apart because of its earthy flavor. The beans we use at Bob’s Red Mill have had their tough, wrinkled, dark brown skins removed by blanching, leaving only the creamy tan “essence” of the dried bean. We mill these beans on our centuries-old millstones. The flour we create is a beautifully fine granulation Fava Bean Flour expressly for your cooking and baking needs. Fava beans offer a great protein source for vegetarians, and our fava bean flour contains 9 grams of protein per serving. It is also a good source of iron and an excellent source of dietary fiber. Fava bean flour has a distinctive flavor and is most often used in combination with garbanzo bean flour for gluten free baking. There are not many recipes for using fava bean on its own, but 1/4 cup can be substituted in place of wheat flour in almost any recipe. We’d recommend savory recipes with this flour. Customers have found that toasting the flour will reduce some of the bean flavor. Spread flour in an even layer on a baking sheet and bake at 350°F, stirring every 5 minutes and watching closely, until lightly toasted.

Fun for gluten free and vegetarians
I used this fava bean flour to make the "socca" from Mark Bittman's book and it was wonderful. As my son the vegetarian said, "It's surprisingly filling." It is high in protein, doesn't have gluten, and tasted great in the socca, which had onions in it and some mixed herbs, fresh tomato, and parmesan put on top toward the end. Gluten free Brownies!
I decided to substitute Bob's Red Mill Garbonzo bean flour for the whole wheat flour in my famous brownie recipe.....well the results were fantastic! I now make the brownies with it every time and no one believes they are gluten free...In fact they are chewier than the original recipe. But I didn't like the flavor when I substituted it in my blubery muffin recipe. I guess the rich baking chocolate in the brownie recipe masked the beanie flavor of the fava beans. LOVE THIS PRODUCT!
